About Us

 

Seedz is a small-batched brewery dedicated to using locally sourced ingredients within the Midwest region. We are proudly using 100% local grain from Empire Malting, Sugar Creek Malting Company, and Granor Farms.  Our hops are grown by Howe Farms and Hop Head Farms. Our beer incorporates local agriculture, to make a beer inspired by the Belgian and German-styles. Our tasting room provides a unique environment for family and friends to come together and unwind in the Harbor Country. 

 

Seedz Brewery Owner and Brewer Ryan Ziarko first started brewing beer in his cousin’s basement. At that time, he was attending college and playing football at Saint Xavier University in Chicago, Illinois. Even with long nights of practice and studying for exams, his main focus was always on brewing techniques and the fermentation process. After homebrewing on his own for four years, he graduated from college and joined Burn ‘Em Brewing in Michigan City, Indiana. Ryan worked there for four years contributing to recipe development, brewing, and cellarman work. Another four years passed when Ryan decided it was time to venture out and create a brewery of his own. 

 

The New Buffalo native wanted to stay close to home when choosing a location. He found an old building in Union Pier that once housed a tiki bar and several restaurants, Café Tuscany and Tommy G’s to name a few. Starting in 2019, he spent the year rebuilding it into a tasting room and adding an additional building behind the house for his brewery. Initially, the plan was to open the brewery in February of 2020, but the COVID-19 pandemic had other plans. With the shutdown, it put a hold on completing the brewery and tasting room. This wasn’t going to discourage Ryan or stop him from achieving his envision. He continued to work on improving recipes and developing a business plan for Seedz. 

 

By February 2021, Seedz officially opened to the public where Ryan released his first bottled beer, “Sleeping Sickness,” a 3.0% table beer brewed with chamomile leaves and fermented with a Belgian yeast strain. 

 

Foam is everything. We pride ourselves in a slow-pour to provide the beer with a frothy foam topping. Having a nice foam sit on the top of your beer glass shows that you have a well-rounded, perfectly executed beer. Seedz Brewery is determined to continue brewing beautiful and delicate lagers/ales and mix-fermentation for years to come.
